Busy Mom’s Chicken & Rice Casserole

Well we made it!  It is Friday!  I don’t know about you, but for me Friday means the end of a long, very busy work week.  Now it is time to kick off my shoes, relax, maybe have a little wine and watch a movie.  What about dinner you ask?  Done!  Thanks to a very easy, but oh so yummy recipe that I know all you busy people are going to love 🙂

What’s not to love?  This recipe is easy and delicious and is made from ingredients that you probably already have in your kitchen.   I like that it is one of those recipes that you can make your own.  You can add to it, substitute or take away from the recipe and still have a delicious Chicken casserole meal in around an hour.  The orange juice gives it a little of a sweet flavor that really makes the recipe, in my opinion.  It received a thumbs up with my family and that means it is also Fiesta Friday worthy.  That’s right!  I am sharing it with all the lovely people over at Fiesta Friday.  Woo hoo!  Time to get the party started!  If you would like to join the celebration, just click on the link below …come on, I know you want to 😉

Busy Mom's Chicken & Rice Casserole

Get dinner on the table quickly with this easy recipe for chicken and rice.  Sure to be a family favorite.

Ingredients:

2 chicken breasts

1 cup of uncooked rice

2 cups orange juice

1 can of cream of chicken soup

1 to 2 bell pepper, cut into slices

1 package Lipton Onion Soup Mix

Directions:

In a baking pan, 9 x 12, spread 2 cups uncooked rice over bottom. Place chicken on top of dry rice. Mix together 1 cup of cream of chicken soup, 2 cups orange juice and 1 package Lipton Onion Soup Mix. Pour this mixture over chicken and rice.  Slice up some bell pepper (I used green, which is what I had, but I think red bell pepper would work well also)  Cover with foil and bake 1 hour at 350 degrees.

Note:  You could substitute celery or mushroom cream soup for the chicken.

I find more and more it is true though…the quick and easy recipes seem to be more popular with the majority. Now quick and easy and healthy …that is my challenge!     • Thank you so much! Yes, I used to make a similar recipe to this when I was first married. I got the recipe from my mother in law, now ex. I had forgotten all about it …funny how you forget things that you can cook. I was searching for something quick to do with chicken during the week and found it! It seems like more and more I have people ask for something quick and easy …this is definitely one of those. 🙂 Thanks so much for stopping by for FF! I am slowly making my way around still … 🙂

  2. I love casseroles! Chicken and rice is of course a favorite. I love using cream of celery soup in mine. And I vary the veggies depending on what I have. But I’ve never tried adding OJ; it sounds just wonderful!! 🙂

    • Thank you Angie! My son loves this, so it is now in our weekly rotation. Plus it is just so darn easy! I tried the cream of celery with the Lipton Onion soup mix, minus the orange juice. I do believe I like the celery better than chicken or mushroom soup. 🙂
