Well we made it! It is Friday! I don’t know about you, but for me Friday means the end of a long, very busy work week. Now it is time to kick off my shoes, relax, maybe have a little wine and watch a movie. What about dinner you ask? Done! Thanks to a very easy, but oh so yummy recipe that I know all you busy people are going to love 🙂
What’s not to love? This recipe is easy and delicious and is made from ingredients that you probably already have in your kitchen. I like that it is one of those recipes that you can make your own. You can add to it, substitute or take away from the recipe and still have a delicious Chicken casserole meal in around an hour. The orange juice gives it a little of a sweet flavor that really makes the recipe, in my opinion. It received a thumbs up with my family and that means it is also Fiesta Friday worthy. That’s right! Busy Mom's Chicken & Rice Casserole

Get dinner on the table quickly with this easy recipe for chicken and rice. Sure to be a family favorite.
2 chicken breasts
1 cup of uncooked rice
2 cups orange juice
1 can of cream of chicken soup
1 to 2 bell pepper, cut into slices
1 package Lipton Onion Soup Mix
In a baking pan, 9 x 12, spread 2 cups uncooked rice over bottom. Place chicken on top of dry rice. Mix together 1 cup of cream of chicken soup, 2 cups orange juice and 1 package Lipton Onion Soup Mix. Pour this mixture over chicken and rice. Slice up some bell pepper (I used green, which is what I had, but I think red bell pepper would work well also) Cover with foil and bake 1 hour at 350 degrees.
Note: You could substitute celery or mushroom cream soup for the chicken.
