This cake is one of those cakes that you make for all occasions. It is perfect for so many occasions, as it is simple in having the basic ingredients, nothing fancy, yet just the right amount of certain things makes it so delicious and rich in taste that it is also great for the most special of celebrations. That is why I call it my Celebration Cake. It is a cake to celebrate life really. All our special moments that we acknowledge by being together with loved ones and friends, celebrating our good times, our accomplishments with delicious food and drink.
This cake came about by accident really. I was looking for a cake recipe one Saturday afternoon. Something I could make with the can of pineapples I had left over from Christmas. My oldest son was coming over to spend the weekend and I wanted to have something sweet for the boys to enjoy all weekend. I knew I did not have a lot to work with, but then sometimes simple is better. This recipe was inspired by two recipes actually, one I love that has bananas (which I did not have at the time) and one that I like from one of my Gooseberry Patch Cookbooks, but with cinnamon. Anyway, the result is absolutely wonderfully delicious! If you like pineapple and cream cheese than you will love this cake!

Celebration Cake

Ingredients
2 c sugar
2 eggs, beaten
2 c flour
2 tsp baking soda
20 ounce can crushed pineapple with 1/2 of juice
1 tsp cinnamon
Directions
Mix together all ingredients. Pour into a greased 13 x 9 baking pan. Bake at 350 for 30 minutes, or until cake is done. Frost with Cream Cheese Frosting when cool. Makes 12 to 15 servings. Cream Cheese Frosting
