I am now 5 weeks out since my Total Knee Replacement. I am just now starting to feel somewhat normal again. Which means …I am back in the kitchen! Lookout! 😉 No, seriously, I am still not cooking anything elaborate or time-consuming. I am not ready to cook anything that has me on my feet for to long …but I am getting there. This is a simple, light, easy recipe that has always been a favorite of mine.
I decided it was the perfect “on the lighter side” New Year’s dish that didn’t have me in the kitchen, on my feet to long. It turned out really good and so I decided it would be a great dish to bring to a fun gathering I am going to. I am talking about Fiesta Friday of course! If you don’t know about Fiesta Friday, you should come with me and check it out. You will see lots of delicious food and meet a great group of people, including our wonderful hostess, Angie, The Novice Gardener. So come on, try some of this delicious Penne Alfredo pasta and join the fun! 🙂

Penne Alfredo with Tomato and Spinach

Ingredients
1 box penne pasta
1 cup of fresh spinach
2 to 3 Roma tomatoes, diced
1 large jar Alfredo sauce
1/4 cup chopped mushrooms
salt and pepper to taste
Directions
Cook penne according to box or package
Meanwhile in a medium sauce pan, saute’ the tomato, spinach and mushroom until tender. Pour in the jar of Alfredo sauce and mix well. Bring to a simmer on low heat, stirring occasionally. Continue to simmer 7 – 10 minutes.
When pasta is done, drain and place in a large serving bowl.
Add Alfredo mixture and stir.
Serve immediately with garlic bread. Yummy!

I love pasta in just about any form. I need to add spinach to more of my recipes. Great lowfat recipe that you’re sharing with all of us at Fiesta Friday. I brought a lowfat salad 🙂

Glad you are healing even though it is slow. I pulled a muscle exercising and it is a “pain” in the leg!
