Chocolate Chip Shortbread Cookies

I have a special love for shortbread cookies.  I love all kinds of cookies …it is really hard not to when there are so many delicious cookie recipes out there.  So many ways to make cookies.  What I have always loved about the shortbread cookie is that it is the simplest of cookies but with the most delicious butter taste.  It does not have to have chocolate and peanut butter or candies or nuts or caramel to make it a great cookie.  Just a little cookie with a melt in your mouth, moist, buttery taste.  Perfection …

Now as much as the shortbread cookie does not need anything else to make it fabulous ….well, okay, I could not resist throwing in some chocolate chips, thus making it more appealing for my kiddo.  This recipe is an adapted version of one I found on allrecipes.com.  It does not take away from the shortbread cookie to add the chips, just a new take on an old favorite for me.  I hope you will enjoy too! 🙂

Chocolate Chip Shortbread Cookies

makes 24 cookies

Ingredients 

 1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter
1/2 cup white sugar
3/4 cup semisweet chocolate chips
Directions

Preheat oven to 300 degrees F (150 degrees C).

Sift together the flour, baking powder and salt, set aside. In a medium bowl, cream the butter and sugar together until fluffy. Gradually stir in the dry ingredients, then stir in the chocolate chips.

Roll or scoop dough into walnut sized balls. Place them on unprepared cookie sheets 1 1/2 inches apart. Flatten cookies slightly. Bake for 15 to 20 minutes, until light golden brown. Remove from sheets to cool on racks.
