The Christmas Rush and Easy Caramel Brownies

I was out last Saturday doing a little Christmas shopping.  It was Black Friday weekend (yes, I know, I lost my mind), I rarely shop that weekend as I don’t enjoy the crowds.  This year I wanted my Christmas shopping done and out of the way because I am having knee surgery next Monday.  My recovery time will probably take the rest of the month, so I will not have another opportunity to shop the stores.  At this time of the year it is expected that there are hundreds of shoppers everywhere, but do people need to be so rushed and unkind!?  It is madness out there!  People are frantic to get everything done.  Everyone looking for that perfect gift, a toy truck for little Johnny, that scarf for Aunt Jane.  The list of things goes on and on.  But wait, before we get so carried away, we need to stop and think about Christmas and its true meaning.  Let us slow down …be kind to one another.  It is Christmas time …the time for good will towards men!  We all like to give and receive gifts, but stop and think about what is truly important at Christmas; the love of family and friends, being together with the ones you love …that is the real gift!  I was reading where someone had the idea to take their family on a trip instead of spending the money on lots of gifts, this way they could all be together at Christmas …I like that idea.  I know to me, it is not the gift which means so much but the thought and having that loved one there to spend Christmas with.  Having my children both home for Christmas is priceless!!!   We are not promised tomorrow, only today.  Let us be thankful for what we already have and who we have in our lives, because that folks can not be bought!  So this Christmas try to slow down, spend more time with your family.  Call that friend you have not talk to in a while …spread the spirit of Christmas!

And on that note, I will spread a little Christmas cheer with this delicious, easy peasy Brownie recipe.  I make this every year at Christmas time and it is always a hit with family and friends.  I hope you out there and everyone at Fiesta Friday will enjoy it too! 🙂

Easy Caramel Brownies

Ingredients

1 box fudge brownie mix

water, oil and eggs called for on brownie mix box

1 cup chopped pecans, optional

1  bag individually wrapped caramel candies such as Kraft or Brach’s, unwrapped

1/3 cup evaporated milk

Directions

Heat  oven to 350 degrees F.  Spray one 9×13 inch or 9×9 inch pan with non-stick coating .  I used a 9×9 inch pan making the brownies a little thicker.

Make brownies as directed on box – except add chopped pecans.

In a saucepan over medium heat, combine the caramel and 1/3 cup evaporated milk. Stir until melted and smooth; pour over slightly cooled brownies.

Cool completely and frost with frosting.  Sprinkle with decorative sprinkles or candy for seasonal effect.

  1. Thank you for this wonderful reminder. I wrote something similar yesterday, but then I remembered my demeanor during a shopping outing my husband and I took the day before: walking too fast, too impatient, too anxious to be done. It seemed like people purposefully were in my way, when in fact, they were just enjoying the chance to shop whereas I wasn’t. I need to exude kindness to everyone, not just those I love. Thanks for the reminder.

  4. I think everybody is so focussed on trying to make the holiday season so perfect they forget to take a moment to actually enjoy it! It can be easy to lose sight of what’s important when you put so much energy into trying to show it!
    I hope your knee surgery goes well and recovery goes by quickly!
