Last Saturday I had a craving for sweets, okay …not just on Saturday, this is happening much to often lately! But anyway …I was in the mood to bake but didn’t want to spend a lot of time in the kitchen, it was a gorgeous Saturday. We usually have the perfect October weather, here in Texas. So here I go into the kitchen to see what I had available to make a cake, or some other delicious, delightful dessert. I had a yellow butter cake mix and apples. As much as I love to make a cake from scratch …it was just not going to happen on this beautiful, outdoor weather Saturday. Ok, so now to find a recipe using the cake mix and apples. Most all the recipes I looked up involved using the apples with the cake mix to make an Apple Upside Down Cake. I honestly was feeling to lazy to cut my apples up in perfect wedges to make this cake look good. Then I thought of making a spice cake, but all the recipes I saw required a spice cake mix and I had a butter cake mix. I saw some good recipes for homemade from scratch spice cakes …but again, I did not want to go the from scratch route today. There were a few other recipes …nothing grabbed my fancy. So I decided I would just experiment and make my own recipe. I wanted to use the apples and cake mix and I wanted a spice cake. So the recipe below is what I came up with and it turned out very flavorful with all the wonderful spices and apples.
I like to keep a cake mix on hand for times just like this when I would rather not spend all day in the kitchen. There are actually some pretty creative things you can do with a store-bought cake mix. Even though I will on occasion use them …the store-bought icing is just not the same as homemade. So I decided to whip up some easy caramel icing. The perfect choice to go with my apple spice cake.
This is one of those recipes where you don’t have the ingredients you really need, so you just add whatever you have on hand and make it your own. Luckily for me it turned out really good and very moist. I have the perfect new recipe for fall. I decided this would be great for our group over at Angie’s, The Novice Gardener. Apple Spice Cake with Caramel Icing
Happy Baking!!
Ingredients
1 Yellow Butter Cake Mix
3 eggs
1 stick of butter, softened
1 cup water
1/2 tsp allspice
1/2 tsp nutmeg
1/2 tsp ginger
1 tsp cinnamon
2 to 3 medium apples peeled and shredded
brown sugar to sprinkle on top of the caramel icing
Directions
Mix all ingredients together and bake as directed on cake mix box. Let cake cool. Spread with icing and sprinkle top with brown sugar.
Easy Caramel Icing
1/2 c butter
1 c brown sugar
1/4 c milk
1 3/4 to 2 c sifted confectioners’ sugar
Melt butter in saucepan. Add brown sugar. Boil over low heat for 2 minutes, stirring constantly. Stir in milk. Bring to boil, stirring constantly. Cool to lukewarm. Gradually add sugar. Beat until thick enough to spread. Add a little hot water, if needed.

That looks delicious! Remember – you’re out to have fun. Why not make an upside apple cake? Do the apples have to be sliced perfectly for it to be delicious? People love homemade items and don’t really care if it’s perfect as long as it tastes good. Or you could have just chunked the apples instead of trying for slices.

Hi Nancy! I think it is me …I think I thought they should be perfect or it would not be good enough for me. However ..I like the idea of the chunks of apples …that would work for me just fine! Now I shall do that! Why I did not think of that in the first place! You are right about other people. I know that when I receive a homemade dessert …all I care is that it taste good.
