Tyler’s Kit Kat Cake

Yesterday was my youngest son Tyler’s 13th Birthday.  He is no longer my little boy, my tween …he is now officially a teenager!  Yikes!!  Where did the time go?  Well …he will always be my little boy, my baby, my last born.  For his Birthday my oldest son is down from Austin and we are spending the weekend at the beach.  Yay!!  But first, before we go I am making him a Birthday cake.  His request:  Chocolate Cake with some kind of candy bar.  Okay, I can do that …all the ingredients for chocolate cake and icing – check, Kit Kat for the candy and center topping – check.  I present to you, for Tyler’s Birthday, Tyler’s Kit Kat Cake.  Please do join us and have a slice.  Yummy!  🙂

Tyler's Kit Kat Cake

Ingredients – Cake:

2 cups white sugar

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup hot water

1 small bag of Kit Kat minis

Directions – Cake

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine-inch round pans.

  1. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
  2. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.  Spread icing on bottom layer of cake, chop kit kat bars and sprinkle on top.  Repeat with top layer of cake.

Chocolate Icing

Ingredients

1/2 cup (1 stick) butter or margarine

2/3 cup cocoa

3 cups powdered sugar

1/3 cup milk

1 teaspoon vanilla extract

Directions

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.

Add small amount added milk, if needed. Stir in vanilla. About 2 cups frosting.
